简介: 摘 要:近年来,人们在日常生活中经常会遇到食品卫生安全问题,各种食品安全事故频发,受到社会各界的广泛关注,在此环境下,国家不断加大对食品卫生安全问题的检查与惩处力度,其中多重 PCR检测技术得到比较广泛的应用实践,并取得良好的效果。基于此,本文以 PCR检测技术的含义与优势特点为切入点,对多重 PCR检测技术在食品微生物检测中的应用价值进行了细致分析,旨在为我国食品安全检测工作贡献一份力量。 关键词:多重 PCR检测技术 ;食品卫生安全 ;微生物检测 Abstract: in recent years, people often encounter food safety problems in their daily life, and various food safety accidents happen frequently, which are widely concerned by all walks of life. In this environment, the state continues to increase the inspection and punishment of food safety problems, in which multiple PCR detection technology has been widely used and achieved good results. Based on this, this paper takes the meaning and advantages of PCR detection technology as the starting point, and analyzes the application value of multiple PCR detection technology in food microbe detection in detail, in order to contribute to the work of food safety detection in China.
简介:摘要:目的:探究微波烹调的营养与食品卫生相关的问题。方法:以4种蔬菜(卷心菜、菠菜、青菜、大白菜)为研究对象,各取适量分别采用微波烹调与煤气烹调,对比两种烹调方式对蔬菜中维生素C的保留率,并分析出与食品卫生相关的问题。结果:微波烹调组蔬菜中菠菜、青菜、大白菜中的维生素C的保留率均高于煤气烹调组(P<0.05);卷心菜两组维生素C的保留率差异不大(P>0.05)。微波烹调对微生物具有热力作用,可对沙门菌、肠道细菌等微生物具有消杀作用。结论:在保留蔬菜中的维生素C方面,微波烹调方式优于煤气烹调,并且微波烹调对食品中不利于身体健康的微生物具有消杀的作用,能提高食品的安全性。
简介: 摘 要:在现代生活中,食品微生物检测是人们关注的重点之一。由于传统技术方法的限制,现有的食品微生物检测方法存在着一定的问题和不足。为了满足未来发展的要求,需要推动酶联免疫吸附法在食品微生物检测中的应用。本文通过分析食品微生物检测的技术要求,对酶联免疫吸附法的应用价值进行了探讨。以此为基础,本文结合时代技术发展的特点,对酶联免疫吸附法的应用特点和应用要点进行了研究。这些研究对酶联免疫吸附法的应用和食品微生物检测的发展有着重要意义,有很高的现实价值。 关键词:酶联免疫法 ;食品检测 ;微生物检测 Abstract: in modern life, the detection of food microorganism is one of the focuses of people's attention. Due to the limitation of traditional technology, there are some problems and deficiencies in the existing methods of food microbial detection. In order to meet the requirements of future development, it is necessary to promote the application of enzyme-linked immunosorbent assay in the detection of food microorganisms. In this paper, the application value of enzyme-linked immunosorbent assay (ELISA) was discussed by analyzing the technical requirements of food microorganism detection. Based on this, this paper studies the application characteristics and key points of enzyme-linked immunosorbent assay (ELISA) in combination with the characteristics of technological development of the times. These studies are of great significance to the application of enzyme-linked immunosorbent assay (ELISA) and the development of food microbial detection.
简介:摘要目的了解广州市流通市场预包装食品营养标签使用现状及消费者对食品营养标签知晓情况。方法采用随机抽样的方法,对65名消费者进行营养标签认知度的问卷调查;采用现场调查方法,对广州市海珠区两所大型连锁超市6大类230件包装食品的营养标签状况进行记录;统计数据采用EXCELL,进行分析处理。结果在本次调查的8大类324种常见包装食品,食品营养标签的平均标识率为69.1%,其中速溶食品、婴幼儿保健食品、保健或功能性食品、乳及乳制品的标识率比较高;而肉及肉制品、谷类食品、零食小吃类食品的标识率较低,只有23%的消费者将食品营养标签信息作为选择食品的首要条件;24.6%的消费者对营养标签信息一点都不了解;有63.1%的消费者只听说过营养标签但不了解。完全了解的只占12.3%.结论消费者对食品营养标签的知晓率不高,对营养标签的具体内容及应用有待提高,需要加强对消费者的营养教育。
